RECIPE: RAW VEGAN RAINBOW ROLLS WITH PEANUT SAUCE

RAW VEGAN RAINBOW ROLL

RAINBOW ROLL

  • Rice Paper Wrappers, 1 sheet for every 2 rolls. I use these

  • Shredded Lettuce

  • 1 Whole Carrot (I prefer to shred it myself, but you can purchase pre-shredded)

  • 1 cucumber, sliced

  • Bell peppers, whatever colors you like!

  • Cilantro Bunch, chopped

  1. Cut all your veggies

  2. Carefully dip your rice paper wrap into water for 5-10 seconds. Remove and gently pat on clean kitchen towel

  3. Transfer rice paper to plate and add veggies - lettuce first, then cucumber, then carrots, bell pepper, and cilantro

  4. Carefully wrap

  5. Seal with a little water on your index finger

  6. seal ends

  7. Cut wrap in half and enjoy!

PEANUT SAUCE

  • 1/4 cup of unsalted peanut butter

  • 2 tablespoons coconut aminos

  • 1 tablespoon of pure maple

  • 1 tablespoon rice vinegar

  • 1 clove garlic, minced

Add all ingredients to a small bowl and stir with fork until smooth. If necessary, add water if you prefer a thinner consistency.
